Pondering a switch to Taurian -- Dex and enrage questions
Currently a human cavalier.
I understand that Dex does basically nothing for me while bashing but is more important than strength for combat? How noticeable will the two dex decrease from human to taurian be in terms of wounding?
Is the enrage ability a toggle? How good is the chance of randomly hitting others? Are there some limits in place that keep it somewhat safe such as keeping one from hitting city guards? Is is generally viable or so dangerous as to be unusable?
Please, general opinions on taurians as warriors are appreciated as well.

No, Dex is decidedly not more important than strength for PvE. Strength adjusts how much wounding you do (and damage as well). Dex just adjusts how likely you are to get a beneficial wounding roll within the range available.
That said, low dexterity is noticeable when you fail to get critical afflictions; this can be overcome by applying more wounding though (the higher the wounding level on the target, the better odds of getting the aff no matter what your dex). Basically, with low dex, you cannot expect to land an aff if you have just barely gotten them to that wounding level.
Enrage is a very minor amount of damage done to a random person in the room. It is generally not noticeable. It is a toggle; you engage it and it lasts for something like 2 minutes. It won't hit NPCs, only PCs, so you don't have to worry about it on guards.

Infact I can't see any mechanical reason why people would play Taurian as a warrior choice, in PK or PvE.
